A Celebration of Atlantic Canada
Last Night I had the pleasure of meeting the amazing Rosanne Tully, CEO & Founder of Intermezzo Magazine, at a dinner in celebration of Atlantic Canada at her home. She is a gracious host and really knows how to put on a dinner party. All of the recipes of the evening were created by her and inspired by the foods of The provinces of Atlantic Canada (Prince Edward Island, Newfoundland & Labrador, Nova Scotia and New Brunswick)
They were prepared expertly by Chef Sebastian Martinez and Chef assistant Claudia Martinez. It was a star studded evening of travel writers, with a presentation about Atlantic Canada by PR Representative extraordinaire Meredith Pillon. Here is the menu. The wines- Veuve Clicquot Ponsardin Champagne, Mionetto II Rose. The Hors D’Oeuvres, Gougeres orange and thyme-caramelized red onion crostini. First course, Prince Edward Island mussels with tomatoes, fennel,garlic and Thai pepper served with Iggy’s breads of the world. Main course, Herbed salmon with basil cream & pan roasted tomato, and oven roasted asparagus. And for dessert, Paris Brest with strawberries & cream.
